Minorcan Mike’s Datil Pepper Jelly Salmon

Ingredients

2 lbs salmon

2 Tbsp olive oil

¼ cup brown sugar

¼ cup soy sauce

3 garlic cloves, minced

Juice of one lemon

1 tsp salt

½ tsp pepper

Minorcan Mike’s Datil Pepper Jelly (1 tsp per filet)

Garnish with sliced lemons and chopped parsley, if desired
Instructions

Combine ingredients (except Minorcan Mike’s Datil Pepper Jelly) in a small bowl. Marinate salmon in mixture for 30 minutes.

Grill salmon on a cedar wood plank on grill. (Soak wood plank in water first.)

10 minutes before salmon has finished cooking, brush 1 tsp of Minorcan Mike’s Datil Pepper Jelly on each filet.

Garnish with lemon slices and chopped parsley, if desired.
